How to Use SDS Sambhar Masala

Making Sambhar

Cook toor dal until soft and mash it smooth. In a separate pot cook your vegetables — drumstick, brinjal, tomato, and pearl onions work well — with tamarind water until tender. Add 1 to 2 tablespoons of SDS Sambhar Masala to the boiling dal and vegetables and stir well. Simmer for a few minutes so the spices blend in fully and the sambhar reaches a thick, aromatic consistency. Taste and adjust tamarind or salt as needed.

The Finishing Tadka

Always finish sambhar with a fresh tadka — heat oil or ghee in a small pan, add mustard seeds and let them splutter, then add whole red chillies and a few fresh curry leaves. Pour this directly over the sambhar just before serving.
